How to operate on an environmentally sustainable basis in harmony with nature.

The driving purpose:
For the organic brewery, Neumarkter Lammsbräu, operating sustainably and in harmony with nature means above all growing and developing while at the same time respecting the bounds of nature.

The overarching goal is to integrate human values and ecological aspects vis-à-vis business processes into the paradigm of economic exchange and at the same time to persuade others that this form of quali-tative growth is worth pursuing. To this end, Neumarkter Lammsbräu sets yearly sustainability objectives for itself and then works hard to see that these aims are achieved by year’s end.

What did Neumarkter Lammsbräu do?
The company’s concrete sustainability goals are driven by three interdependent strategies based on effi-ciency, consistency and sufficiency. The success of the measures implemented by Neumarkter Lammsbräu is analysed in a detailed, annual report on sustainability.

Efficiency – saving resources, protecting the climate
The brewery tests new equipment or processes in order to assess their impact on the firm’s overall ener-gy saving (e.g. forklifts, refrigerators, cooling devices).

Material consumption is kept as low as possible and waste is avoided to the greatest possible extent and otherwise recycled.

Consistency – operating in harmony with nature
The firm uses the circular economy as a model for production; this means that raw materials do not get lost in the production chain and instead are reused or in some cases reintroduced back into nature (i.e. by composting organic waste and donating residual grain to farms for use as livestock feed).

The multi-cycle system and the use of reusable glass bottles lead to the avoidance of waste and a better carbon balance.

Process heat and water used during production are recycled and reused multiple times, for instance by employing a heat exchanger in a cross-flow process.

Carbon dioxide emitted from the alcoholisation process is not released into the atmosphere but instead utilized elsewhere (e.g. in the bottle filling process).

Sufficiency – promoting lifestyle changes
Through intensive PR and networking efforts the brewery promotes a sustainability-oriented, ecological lifestyle. Examples of a way of life based on sustainable consumption include the use of car-sharing or car-pooling, the transition to a low-meat and organic diet, avoiding food waste and heating water with the help of the sun.

These measures led to:
Annual savings: In the last few years, thanks to the measures described above, Lammsbräu frequently sets efficiency records pertaining to resource use. Alone in 2001, new and more efficient bottle cleaning equipment saved the company 5,000 EUR, which ever since is used as prize money for the annual “Neu-markter Lammsbräu Sustainability Award.” Simultaneously, the firm has seen a consistent decrease in the amount of CO2 emissions per hectolitre of beverage produced.

Reputation/Image: The brewery’s active engagement with sustainability has had an impact on the entire region. Neumarkter Lammsbräu even serves as a role model for companies from outside the beverage industry. Customers value the company’s commitment to sustainability. Above all projects related to bio-diversity conservation, such as the plans for biodiversity protection on arable land (see http://www.kulturlandplan.de/home.html, German only), serve as genuine symbols of the firm’s solid sense of purpose.

Emotional Value-Added: Neumarkter Lammsbräu’s brand represents transparency, responsibility and engagement.

For those who aspire to do the same, Neumarkter Lammsbräu has this advice:
• Essential raw materials: Make choices based on the origin and context of the raw materials, i.e. through biological production and natural cycles.
• Establish a certified environmental management plan.
• Involve employees, suppliers and customers.
• Define the topic closest to your heart and work on it.

“The example of Neumarkter Lammsbräu shows that it is entirely possible in today’s market to operate sus-tainably in harmony with the environment. Such an endeavour requires that a firm be ready to take on de-manding goals that may not be in line with the usual way of business and see these aims through to the end.”
